Artisanal premium cheese
Spicy, traditional hard cheese from the shepherds of Tzoumerka Mountains in Epirus. It is considered the oldest of the Greek hard cheeses that originate from Epirus.
It is made exclusively from sheep milk of local breeds, sometimes with a slight blend of goat milk, salt, rennet and crop. The sheep graze in the lowlands in the winter, while in the summer they climb pastures of up to 2000 meters.
It is a particularly rich cheese with a strong, pleasantly salty, slightly spicy and acidic taste and strong finish. It has a solid body, with a slim, natural crust and a milk and butter aroma and notes of aromatic plants and shepherds' herbs.
Ideal for a wide variety of pasta. It is also traditionally served fried.
Enjoy it with fresh season fruits such as pears, figs and grapes. Recommended with strong red wines, sweet wines and drinks such as tsipouro and grapefruit.
