Artisanal premium cheese

Spicy, traditional hard cheese from the shepherds of Tzoumerka Mountains in Epirus. It is considered the oldest of the Greek hard cheeses that originate from Epirus.

It is made exclusively from sheep milk of local breeds, sometimes with a slight blend of goat milk, salt, rennet and crop. The sheep graze in the lowlands in the winter, while in the summer they climb pastures of up to 2000 meters.

It is a particularly rich cheese with a strong, pleasantly salty, slightly spicy and acidic taste and strong finish. It has a solid body, with a slim, natural crust and a milk and butter aroma and notes of aromatic plants and shepherds' herbs.

Ideal for a wide variety of pasta. It is also traditionally served fried.

Enjoy it with fresh season fruits such as pears, figs and grapes. Recommended with strong red wines, sweet wines and drinks such as tsipouro and grapefruit.

Γραβιέρα

Graviera

Artisanal, premium cheese

Rich and elegant cheese with mild, slightly sweet and buttery taste, with walnut notes. It has a velvety texture and is less salty than other cheeses.

It is made exclusively from sheep milk of local breeds, sometimes with a slight blend of goat milk, salt, rennet and crop. The sheep graze in the lowlands in the winter, while in the summer they climb pastures of up to 2000 meters.

Its body is compact and elastic with several holes. It has a velvety, nutty taste, full of butter and milk proteins and is long-lasting. As it matures, it acquires a wonderful complexity of flavours and becomes more earthy.

Tip: Gruyere is a high nutritional product since it is the highest calcium cheese.

Enjoy it with rustic bread, as an appetizer or snack. Perfect for toast and pizza. Recommended with light red wines such as a Pinot Noir or white wine such as Chardonnay or Assyrian.

ANOSTRU PAPRIKA

A Nostru with paprika

Artisanal, gourmet cheese

Extra hard gourmet sheep milk cheese, with a solid paste, containing paprika that gives a marble looking cheese body. It's natural covering is processed with olive oil and smoked paprika and as a result is hard and red in colour.

It is made with an old traditional and forgotten technique and has the symbolic name 'Anostros' which means 'ours' in the Vlach dialect. It undergoes a special daily hand-crafted process from day one until the final maturation stage.

It has a mild initial feel and then a spicy but not salty taste with sweet notes of paprika and long finish.

Ideal for an appetizer but also at the end of a meal. Recommended wines are fresh and shiny red or rosé varieties, especially from the Xinomavro kind. Sweet wines are also suitable.

Goat cheese

Premium healthy cheese

Mild hard cheese characterised by a rich aroma and destinct taste.

It comes exclusively from goat milk, salt, rennet and from animals that graze in lowlands and in steep mountain areas, depending on the season, often free.

A soft-spiced, delicate cheese that satisfies even the most demanding palate, especially those who appreciate goat dairy products and flavours.

It is a healthy cheese especially suitable for children, school snacks and toast. It is also excellent in the kitchen, in pasta, risotto and sauces.

Recommended with white aged wines and reds of medium body, alcoholic grade and ageing.

PECORINO

Pecorino

Strong cheese with rich aroma and characteristic spicy but creamy taste.

It is derived exclusively from sheep milk of local breeds kneaded with lamb rennit, salt. The sheep graze in the lowlands in the winter, while in the summer they climb to pastures up to 2000 meters.

It is buttermilk in texture and taste, with nutty notes, wonderful and long lasting. It's aroma is rich and buttery, characteristic of milk from herds feeding at high altitudes. As it ages, its texture becomes grainy and crisp.

Enjoy it with rustic bread, with salads, vegetables and pasta. Ideal for dessert with dried fruits.

Recommended with mild red wines of medium body and ripe, from varieties such as Sangiovese, Merlot, Greek Agiorgitiko and of course Epirus wines.
